Ingredients
4 large tomatoes
1 sweet whole onion, peeled
1 t. olive oil
1 T. garlic, chopped
1/4 t. cinnamon
1/2 t. nutmeg
1/4 t. ginger
1/2 t. sugar
2 c. chicken broth
Directions
Preheat oven to 350.
Spray baking sheet with non-stick spray and place tomatoes and foil wrapped
onion on baking sheet.
Roast tomatoes and onion about 45 min. until tomatoes are golden brown.
Remove from oven and cool 20 min.
Remove tomato skins and discard.
Cut onion into chunks and saute onion and garlic in olive oil.
Add roasted tomatoes, mashing them up with a spoon while cooking.
Add spices and sugar, stirring well to combine.
Add chicken broth and bring to a slow boil, stirring constantly.
Reduce heat to low and simmer 20 min. to allow flavors to blend.
