Ingredients
2 pkgs. frozen chopped spinach
1 1/2 can artichoke hearts (chopped and strained)
1 onion, chopped
1 stick of butter
1/2 tsp. cayenne pepper
salt/pepper to taste (I also like to add onion and garlic powder)
8 oz. philly cream cheese
8 oz. shredded monterey jack cheese
4 oz. shredded mozzarella cheese
4-6 oz. whipping cream
4 oz. shredded parmesan cheese
Directions
1. Cook spinach according to package (I must microwave it...drain and set
aside)
2. Saute onion in butter till tender
3. With a beater/mixer, beat cream on medium speed and gradually fold in
cream cheese, until it forms a creamy mixture.
4. Mix all the above ingredients EXCEPT for the parmesan cheese)
5. Marinate in fridge for at least 2 hours. (the longer the better)
6. Top dip with shredded parmesan cheese and heat in microwave until hot and
the cheese is melted; stir it around a bit.
7. Serve with tortilla chips!
