Baked Chicken Kiev

Ingredients

1/4 cup margarine -- chilled
2 tablespoons fresh parsley -- minced
1 clove garlic -- minced
2 boned and skinned chicken breasts -- halved
3 tablespoons skim Milk
3 1/2 tablespoons bread crumbs -- fine
1 small lemon -- cut into wedges
To taste black Pepper -- fresh ground
Round toothpicks


Directions

In a small mixing bowl, combine margarine, parsley, garlic and black pepper to taste (Mixture will be a paste). Shape margarine mixture into four short sticks (about 2 inches) and freeze them on a plate, until firm. Once your chicken breasts are halved, you will have four pieces of chicken. Place each chicken breast half between 2 sheets of waxed paper and flatten to ¼ inch thickness with a meat mallet or rolling pin. Remove margarine sticks from freezer, and place 1 margarine stick in the center of each chicken breast, folding ends over margarine and rolling up, beginning with long side. Secure each end with wooden toothpicks. Dip chicken rolls into the milk and then roll in bread crumbs to coat completely. Bake at 400 degrees F for 30 minutes, or until browned. Baste each piece with juices from pan, and serve with lemon wedges.
