1 1/2 c. chopped walnuts, finely ground
3/4 t. salt, divided
1/4 t. pepper, divided
4 chicken breasts
2 T olive oil, divided
1 onion
1 can whole kernel corn, drained
Directions
Heat oven to 375. Combine nuts, 1/2 t. salt, and 1/8 t. pepper in a pie
plate. Press smooth sides of chicken into mixture to coat. Heat 1 T. oil in
skillet and add chicken, nut side down. Cook 2 minutes per side. Transfer to
oven and bake 12-13 min. or until cooked through.
Meanwhile, dice onion and cook in remaining oil with remaining salt and
pepper. Lightly char the onion (about 3 min.). Add corn and cook another 2
min.
Spoon onion corn mix over chicken immediately before serving.
