8 oz. angel hair pasta
5 T. olive oil
1-2 cloves garlic, chopped
1 tsp. dried oregano
1 T. pesto
1 lg. onion, halved & sliced
1 (15 oz.) can diced tomatoes
1/4 c. heavy cream
4 T. parmesan cheese
Directions
Cook pasta. In skillet heat olive oil. Add garlic and oregano and saute
for 1-2 minutes or until garlic is softened. Add pesto and cook an
additional minute. Add onion, stir, then cover. Cook 8 minutes over medium
heat. Add tomatoes and cook for 2 minutes, uncovered. Add heavy cream and
stir over medium heat for 2 minutes. Toss pasta with sauce. Sprinkle with
parmesan cheese.
