1 cup quick cooking grits
4 cups water
1 teaspoon salt
4 ounces butter
12 ounces cheddar cheese, sharp, grated
1 egg
3/4 cup milk
dash of hot sauce (optional)
Directions
In a large saucepan, bring the water and salt to a full boil. Slowly whisk
in the grits. Reduce the heat and cook, stirring constantly, until thick
(about four minutes). Remove from the heat and stir in the butter and 1/2 of
the cheese. In a separate bowl, lightly beat the egg. Add the milk and mix
well. Add the hot sauce if desired. Add the mixture to the grits. Pour into
a buttered two-quart casserole. Top with the rest of the cheese. Bake at 350
until lightly brown (about one hour).
