2 T. vegetable oil
1 1/2 lbs. ground beef
1 (15 oz.) can black beans, drained
1 (9 oz.) can kernel corn, drained
1 med. onion, chopped
8 oz. sour cream
1 c. mild salsa
3 c. crushed tortilla chips
8 oz. shredded cheddar cheese
1 med. tomato, chopped
Directions
Brown beef and drain. Combine beef in large bowl with beans, corn, onion,
sour cream and salsa. Stir until combined. In casserole dish spoon
enough of beef mixture to cover bottom. Arrange half of tortilla chips on
top of meat mixture. Cover with more meat mixture and half of cheese.
Repeat layering pattern and top with tomatoes. Bake at 425 for 10-12
minutes.
