Monday

Breakfast

Banana Smoothie
Put 1 cup of milk, 2 tablespoons of plain yogurt and 1 small banana in a food processor or blender and whip until smooth. Serve with a straw.

Lunch

Muffin Pizzas
Preparation: 10 minutes
Cooking time: 5 minutes
SERVES 2

1 English muffin, halved
1 tablespoon tomato ketchup
1/4 cup chopped ham
1/4 cup sliced pineapple (optional)
1/2 cup grated mozzarella cheese

Spread each muffin half with tomato sauce. Top with ham and pineapple and sprinkle with cheese. Broil until the cheese melts. Serve with a small salad.

Dinner

Mini Shepherd's Pies
Preparation. 10 minutes
Cooking time: 30 minutes
Serves 4

1 tablespoon oil
1 lb ground steak or beef
2 tablespoons all, purpose flour
1 cup beef stock
2 tablespoons chopped parsley
pepper, to taste
4 potatoes, peeled and cooked
1/4 cup milk
1/2 oz butter
2 cups frozen mixed vegetables, thawed (peas, beans, carrots)
1/2 cup grated cheese
1/4 cup dried bread crumbs

Preheat the oven to 350'F. Heat the oil in a frying pan, add the ground steak and brown, breaking it up with a spoon as it cooks. Stir in the flour and cook, stirring, for 1 minute. Blend in the stock, parsley and pepper. Simmer, stirring, for about 5 minutes, or until the mixture thickens. Note: Use chopped cooked meat (such as leftover roast) in place of ground steak. Mash the potatoes well and beat until smooth with the milk and butter, adding more of each if needed. Spoon the meat mixture into four small ramekin or custard dishes. Top with an even amount of vegetables and spread the mashed potato over the top. Mix together the cheese and bread crumbs and sprinkle over each pie. Bake in the oven for 10-15 minutes, or until the tops are golden.

Breakfast

Lunch

Omelet
Preparation. 5 minutes
Cooking time: 5 minutes
SERVES 1

1 egg
1 tablespoon milk
1 teaspoon butter
fillings such as cottage cheese, leftover vegetables, chopped cooked bacon, chopped tomato, sliced mushrooms
1 cup grated cheese

Whisk together the egg and milk. Melt the butter in a small frying pan and add the egg mixture, swirling to cover the pan. When the omelet is almost set - sprinkle the filling over it. Fold in half to enclose the filling. Cook 1 minute more. Slide onto a plate and allow to cool.

Serve with small salad & crackers

Dinner

Pasta Bake
Preparation. 10 minutes
Cooking time. 1 hour
serves 4-6

8 oz pasta, cooked and drained
4 oz ricotta cheese
3 eggs
1 tablespoon olive oil
1 onion, chopped
1 lb ground steak, lamb, pork or chicken
14 oz can tomatoes, chopped
1/2 cup water
2 tablespoons tomato paste
10 fl oz cream
1 1/2 cups grated cheese
1/2 cup fresh bread crumbs

Combine the pasta with the ricotta and 1 egg. Press into a greased (you can spray with Pam) casserole dish. Heat the oil in a pan and cook the onion until tender. Add the ground steak and brown well. Stir in the tomatoes, water and tomato paste. Simmer, uncovered, for 15-20 minutes, or until the sauce begins to thicken, and then spoon over the pasta. Whisk together the cream, remaining eggs and 1 cup cheese and pour over the meat mixture. Combine the remaining cheese and the bread crumbs and sprinkle over the top. Bake at 350'F for 35-40 minutes, or until golden.

!!!!! Today's dinner is a CROCKPOT recipe -
so make sure you begin to prepare EARLY !!!!!!

Breakfast

Toddler Muesli
Mix together 1 cup rolled oats,
1/2 cup mixed dried fruit (chopped or grated apple, apricot, or pear),
2 Crushed Shredded Wheat Biscuits &
2 tablespoons oat bran.

Store in airtight container. Serve with milk, rice milk, breastmilk.

Lunch

Savory Shells
Preparation: 10 minutes
Cooking time: 10 minutes
SERVES 1

1/2 oz butter
1/4 cup chopped mushrooms
2 teaspoons all purpose flour
1/2 cup milk
1/4 cup cottage cheese
1/4 cup grated mild Cheddar cheese
1 small tomato, peeled, seeded and chopped
1 1/2 cup cooked pasta shells

Melt the butter in a small saucepan and saute the mushrooms until tender. Stir in the flour and cook for 1 minute. Remove from the heat and gradually blend in the milk, stirring all the time until smooth. Return to the heat. Cook, stirring continuously, until the sauce boils and thickens. Reduce the heat and simmer for 3 minutes. Blend in the cheeses and tomato then gently mix through the pasta shells and serve.

Dinner

Crockpot Beef Stew
1/4cup flour
1 lb. lean beef, cut into 1 inch cubes
4 carrots, scrubbed and cut into 1/2-inch slices
4 potatoes, peeled and cubed
1 small onion, peeled and finely chopped
1 celery stalk, cut into 1/2-inch slices
1 clove garlic, peeled and crushed
1 bay leaf
1 1/2 cups water or chicken broth

Stir flour with meat to cover. Place in crockpot. Add all remaining ingredients, mix well, and cook on low for 10 to 12 hours, or on high for 4 to 6 hours.

Breakfast

French Toast
Beat an egg or use egg substitute equivalent, with a little milk. Cut a slice of white or wheat bread into 4 squares and dip into the egg. Cook in a non-stick frying pan, brushed with a little oil or melted butter, until golden brown. Serve with apple slices & milk, breastmilk or formula.

Lunch

Tot Sandwiches
Take tuna, chicken salads, ham & chees, etc., and put on wheat or white bread. Cut into quarters or use cookie cutters for fun sandwiches. Serve with milk or diluted fruit juice.

Dinner

Toddler Mix
1 potato, peeled and chopped
1 carrot, chopped
1 zucchini, chopped
1/2 cup chopped sweet potato
1/4 cup chopped green beans
1/2 cup chopped cooked meat

Steam, boil or microwave the vegetables until tender and then mix with the meat and serve.
